Squash

Summer squash was Elizabeth's first solid food. I cooked it and mashed it up with a fork and fed her with a teaspoon. She has always liked squash, and watching it grow in our garden has made her really enjoy eating it. The other day she and Silas helped me pick 4 small yellow squashes, the first from our garden this year. I fixed them our favorite way and we ate every bite. Here's how:

Saute an onion in a tablespoon of butter. Add thinly sliced squash and a can of rotel tomatoes. Add a little water if necessary, and simmer on low heat until squash is tender. Drain off any excess liquid and sprinkle grated cheddar cheese over all. Mmmmmmm, yummy!

Sounds Yummy!! Hannah loves squash... Zucchini on the BBQ is our favorite though. :)

Oh, I love grilled squash too. But my family likes it best this way, so we don't grill it very often.

Stephen HATES squash fixed this way. So I get to eat the whole pan.:)

Actually, I don't like summer squash much no matter how you cook it. I CAN eat it this way, but you have to understand the recipe I grew up with was a bit different.

...Leave squash on vine until huge and hard. Make the kids who hate squash go pick it. Slice and cook endlessly in frying pan until a smelly yellow substance the consistency of pudding is formed. Serve smelly pudding and demand that your kids eat every bite. Spank any offender for gagging.

Ugghhh...I'm getting light headed and naseous now........must get fresh air.....

In this Coffeehouse Dan and I are doing a lot of cooking. I'm really happy to be in a kitchen, and to get to choose all of the food I eat. Drew, the first of two housemates we have this summer lives off of Ramen and MacandCheese so we've been laughing at him and discussing food, and feeding him a bit.

Today, while I made Enchilladas and Dan ate a Salad Drew came in and said that he essentially has figured out how he rates the aspects of food.

1. Must be Cheap
2. Must be Easy
3. Taste

Anyway, all that to say that even though I don't have a garden I hope to buy some squash this summer and try it this way. I've never made this.
