One thing my mom did growing up during lean times was to have beans once a week. Saturday was bean day. Now I do the same thing. I cook a big pot, usually on Mondays when we're recovering from the weekend, and then we have leftovers for lunch a couple days after that. It's cheap, it's good, and it's predictable. Plus, it's nice to have a day when I know that I can just put a pot on to simmer and I don't really have to cook!

Love your idea- we do this as well. My family loves it. What do you do to the beans to prepare them and make them yummy? What kinds do you like?

Thanks for the comment Tami. I usually use kidney beans and make red beans and rice, sometimes with sausage, sometimes without. I add Tony Chachere's Creole seasoning and oregano. For a change I also make pinto beans with chili powder. Once they cook down, it;s nice to stir in some cheese for extra flavor...I don't usually do this though.
